This is the first thing I’ve cooked–or eaten–for days. I really almost never get sick, but I’ve been knocked out with a 102 fever since Sunday morning. I finally dragged myself out of bed for a few hours today simply because I couldn’t stand it any more. I had ordered some Chinese noodle soup for lunch, which was pretty bland, but that was okay because I was only eating plain foods while I was sick: oatmeal, wheat crackers, apples, English muffins. But I also had all my beautiful veggies from the farmer’s market last week and I really wanted to cook them before they perished.
So I sauteed some fairytale eggplants, some round green squash that I can’t remember the name of, and added the remaining noodles and veggies from my soup. With a little sesame oil, soy sauce, rice vinegar, a pinch of brown sugar, and several arbol chiles, it turned out to be something quite tasty that I’m calling Fried Soup with Fairytales.
